Greedy granola (gf, sf, vegan) / Razkošna granola (gf, sf, vegan)

This granola is shamelessly greedy. It’s all-in, bring-it-on, i-want-it-all kind of granola. But it’s without any sweetener. Feel free to add some honey if you like (but then reduce the amount of water and baking time). This recipe makes 1,5 kg granola, which is a lot and can be a little pricy too, but i’ll keep for weeks (if you’re not me and eat it in 10-12 days).

Ingredients (for 1,5 kg):
250 g gluten-free oats
25 g chia seeds
25 g shredded coconut
10 g hemp seeds
25 g pumpkin seeds
25 g sunflower seeds
20 g flax seeds
50 g hazelnuts (roughly chopped)
50 g almonds (chopped)
50 g pecan nuts (chopped)
50 g walnuts (chopped)
50 g cashew nuts
1 Tbsp cinnamon
1 Tbsp (seed-)nut butter (such as almond, hazelnut, peanut..)
100 g coconut oil (melted)
150 mL coconut milk or water
(Optional: 1 Tbsp vegan vanilla powder (=15 g); as a sweetener substitute)

Instructions:
1. Set the oven to 180°C.
2. Melt the coconut oil, add the water, nut butter, cinnamon and mix well.
3. Roughly chop seeds and nuts.
4. Beat together oats, seeds, nuts in a big bowl, add the oil-water mixture and mix well to coat evenly.
5. Place and spread granola evenlyon a baking pan with baking paper.
6. Bake for about 20-25 minutes at 180°C, then stir and bake for another 20 minutes on 150°C. Nuts have to become crispy, toasted and brown. Granola will crisp up as it cools, so let it cool completely.
7. Keep and store in an airtight container.

Sestavine (za 1,5 kg granole):
250 g brezglutenskih ovsenih kosmičev
25 g chia semen
25 g nastrganega kokosa
10 g konopljinih semen
25 g bučnih semen
25 g sončničnih semen
20 g lanenih semen
50 g lešnikov (grobo nasekljanih)
50 g mandljev (grobo nasekljanih)
50 g pekan oreščkov (grobo nasekljanih)
50 g orehov (grobo nasekljanih)
50 g indijskih oreščkov
1 žlica cimeta
1 žlica masla iz oreščkov (arašidovega, mandljevega, lešnikovega..)
100 g kokosovega olja (stopljenega)
150 mL kokosovega mleka ali vode
(Po želji: 1 žlica (=15 g) veganskega vanilijevega proteinskega prahu; kot nadomestek sladila)
(Po želji: sladilo, npr. med)

Navodila:
1. Segrej pečico na 180°C.
2. Stopi kokosovo olje, primešaj vodo, maslo iz oreščkov, cimet ter vse skupaj dobro premešaj.
3. Grobo nasekljaj oreščke in semena.
4. Kosmiče, oreščke in semena premešaj v veliki posodi ter jim dodaj kokosovo olje. Dobro premešaj, tako da so vse sestavine enakomerno prekrite s tekočino.
5. Položi na pekač, obložen s papirjem za peko ter granolo enakomerno razporedi po vsej površini.
6. Peci približno 20-25 minutes na 180°C, nato premešaj in peci še 20 mint na 150°C. Oreščki morajo postati rahlo rjavi, hrustljavi in zapečeni, a ne zažgani. Granola bo med hlajenjem postala še dodatno hrustljava, zato jo po peki popolnoma ohladi.
7. Shrani v nepredušno zaprti stekleni posodi.
