Roasted strawberry coconut popsicles (vegan) / Veganske jagodno-kokosove sladoledne lučke

I know, another ice cream recipe. But I mean…it’s summer. What else should I eat (and crave)!? The good news is that unlike the store-bought ice cream, which is usually highly processed, you can actually have these popsicles (almost) every day, because they’re just a frozen smoothie. So don’t be ridiculous and restrict yourself from having one.

These 4 ingredient (or less, if you wish) pops are the easiest thing to do. So let’s get started…

Ingredients (for 10 small pops or for 4 pops and 2 smoothies):
500 g fresh strawberries (keep some of them, about 100 g, fresh)
250 mL cooking coconut milk (such as Thai kitchen)
pinch of pure vanilla powder or 1 Tbsp pea-vanilla protein powder
1 tsp honey (optional)

Method:
1. Clean the strawberries. (If you want to avoid this step, do it, but you’ll risk eating some traces of (your or random) cat’s poop. Or at least some pesticides.)
2. Roast 400 g of strawberries in the oven at 200°C, for about 15-20 minutes (or a bit longer).  Roasting will make them sweeter in taste and darker in colour. If your strawberries are already very sweet, you can even avoid using a sweetener later on. Keep 100 g of the strawberries fresh (just for fun).
2. Blend all ingredients in a blender (= make a smoothie). Blend roasted and fresh strawberries, coconut milk, honey and a pinch of vanilla. (Add some protein powder if you wish to increase the amount of protein in your pops.)
3. Pour the mixture in popsicle molds and freeze for 2-4 hours.
4. Eat.

Vem, še en recept za sladoled. Ampak…poletje je. Kaj drugega bi naj človek jedel ali si želel!? Ker te sladoledne lučke naredi zares fantastične je dejstvo, da so dejansko zamrznjen smoothie, torej bi vam uživanje ene (ali dveh ali štirih) na dan lahko celo priporočala.

Te enostavne lučke vsebujejo le 4 sestavine ali pa še kakšno manj, če katerega izmed dodatkov izpustite.

Sestavine (za 10 majhnih lučk ali pa za 4 lučke in 2 smoothija):
500 g svežih očiščenih jagod (100g prihranimo svežih)
250 mL kokosovega mleka za kuhanje (npr. Thai kitchen)
ščep čistega vanilijevega prahu
1 žlička medu (sladilo po želji, če so jagode zelo sladke, ga niti ne potrebujete)

Priprava:
1. Očistimo jagode. Če želimo ta korak izpustiti, ga seveda lahko, a pri tem na lastno odgovornost tvegamo zaužitje majhnih sledov živalskega drekca. Ali pa vsaj nezanemarljive količine pesticidov. (Razen če ste kul in imate ekološke jagode in nobenih domačih, prosto sprehajajočih se živali. In ogrado okoli jagod, ki še mušicam komaj omogoča dostop do sadja.)
2. 400 g jagod popečemo v pečici na 200°C, približno 15-20 minut (lahko tudi malo dlje). Pečenje bo pripomoglo k dodatni sladkosti sadja, zaradi česar se lahko kasnejšemu slajenju celo izognemo. 100 g jagod prihranimo svežih (kar tako malo za hec).
3. V električnem mešalniku ali s paličnim mešalnikom nato zmešamo sveže in pečene jagode z žličko medu in 250 mL kokosovega mleka. Dodamo ščep čiste vanilije (lahko tudi proteinskega prahu, če želimo izboljšati proteinski nivo teh sadnih lučk).
4. Prelijemo v modelčke za sladoled, zamrznemo v skrinji za 2-4 ure in v tem času nestrpno gledamo na uro.
