Lime and ginger water kefir / Vodni kefir z ingverjem in limeto

Water kefir is a fizzy probiotic drink full of healthy bacteria. This recipe comes in handy on hot summer days, when you need an easy-to-make, refreshing and healthy pick-me-up. Serve over ice and fresh slices of lime and ginger.

Water kefir is usually made by combining kefir grains with sugar and water where they will ferment. I replaced the sugar with some dried pitted dates, so that the drink doesn’t have any sweet aftertaste. If refreshing bitterness is not your thing, sweeten the beverage with some honey.

For 1 litre

Ingredients:
1 litre filtered water
6-10 dried pitted dates, torn apart
1-2 Tbsp kefir grains, cleaned with cold water
2 slices of organic lime
1 Tbsp of fresh ginger
2 mint leaves
1 thyme  leave

Make it:
1. Add the water and pitted dates to a clean jar. Add clean kefir grains and give it a good stir. Secure the lid.
2. Leave the jar to ferment at a room temperature (out of direct sunlight) for 24-48 hours.
3. After 24-48 hours, strain the liquid (without kefir grains) into a fresh 1-litre bottle, add some fresh ginger and lime slices, mint and thyme leaves and put them in the fridge until you’re ready to drink the beverage.
*If refreshing bitterness is not your thing, sweeten the beverage with some honey.

4. REPEAT: Carefully place your kefir grains into another clean jar for your new batch of kefir. Repeat the whole procedure.

*You can try to make it with coconut sugar instead of dates, or with another sweet dried fruits such as apricots or figs. Instead of normal water, you can also use a coconut water. Try to replace ginger, lime and mint with other fresh fruits or herbs (berries, pomegranate seeds, slices of orange or basil and rosemary).

Vodni kefir je osvežilna mehurčkasta pijača, polna dobrih bakterij. Ta recept za vodni kefir pride še posebno prav na vroče poletne dni, ko si zaželimo nečesa osvežilnega in zdravega. Postrezite z ledom ter svežimi rezinami limete in ingverja.

Vodni kefir se običajno pripravi z mešanjem kefirjevih zrn s sladkorjem in vodo, kjer se na sobni temperaturi fermentira od 24-48 ur. V tem recept sem namesto sladkorja uporabila sladke suhe izkoščičene datlje, tako da nima pijača po koncu fermentacije prav nobenega sladkega priokusa. Če vam osvežujoča trpkost pri pijačah ne ustreza, jo lahko po koncu fermentacije sladkate z medom.

Za 1 liter

Sestavine:
1 liter filtrirane vode
6-10 suhih izkoščičenih datljev
1-2 jedilni žlici kefirjevih zrn (spranih z mrzlo vodo)
2 rezini bio limete
1 žlica svežega ingverja, narezanega na kocke
2 vejici sveže mete
1 vejica svežega timijana

Priprava:
1. Izkoščičene suhe datlje in vodo daj v stekleni kozarec, ki sprejme 1 liter tekočine. Dodaj kefirjeva zrna. Premešaj. Zaščiti s pokrovom ali gazo.
2. Vsebino kozarca pusti fermentirati na sobni temperaturi, izven dosega direktne sončne svetlobe približno 24-48 ur.
3. Po dokončani fermentaciji prelij tekočino (brez zrn) v svež kozarec, dodaj koščke svežega ingverja in rezine limete, svežo meto in timijan ter postavi v hladilnik, da se napitek ohladi.
*Če ti trpkost napitka ne ustreza, ga lahko dosladiš z medom.

4. PONOVI POSTOPEK: Previdno prestavi kefirjeva zrna v nov čist kozarec in ponovi ves postopek.
*Poskusi kefir pripraviti s kokosovo vodo, sladkorjem namesto suhega sadja, ali z uporabo drugegaa suhega sadja, denimo z marelicami ali figami. Namesto limete uporabi jagodičevje, rezine pomaranče ali granatno jabolko.
