30-minute Bread / Domači brezglutenski kruh

This recipe makes 1 loaf.

Ingredients:
350 buckwheat flour
100 g gluten-free oat flour (made from uncontaminated, gluten free oats)
50 g flax seed flour (from here)
300 g water
120 g fresh kefir
7-10 g (1 teaspoon) salt 

Method:
1. Make the gluten free oat flour. You can simply grind it in a high speed blender, coffee grinder or in a food processor.
2. Place all the ingredients(flours, water, kefir and salt) in the bowl and mix/knead them well.
3. Flatten the dough on a baking sheet, lined with parchment paper. Leave to proof for about 30 minutes.
4. Preheat the oven to 230°C. Place an overproof mug with 50-100 g water in the oven. Bake for 25-30 minutes.

Recept za eno štruco kruha.

Sestavine:
350 g ajdove moke
100 g brezglutenske ovsene moke (iz doma mletih brezglutenskih ovsenih kosmičev)
50 g lanene moke (od tu)
300 g vode
120 g kefirja
7-10 g (1 žlička) soli

Priprava:
1. Pripravi brezglutensko ovseno moko. Brezglutenske ovsene kosmiče lahko zmelješ v moko v kavnem mlinčku, električnem procesorju ali blenderju.
2. Vse sestavine (moke, vodo, kefir in sol) zmešaj in zamesi v posodi.
3. Maso splošči in oblikuj v štruco na papirju za peko, prekrij s kuhinjsko krpo in pusti počivati približno 30 minut.
4. Segrej pečico na 230°C. V pečico daj skodelico vode, primerno za visoke temperature. Peci kruh 25-30 minut.
